My Shepherd

The Lord is my shepherd; I shall not want. he makes me lie down in green pastures.
He leads me beside still waters.
He restores my soul.
He leads me in paths of righteousness for his name's sake.
Psalm 23: 1-3

I made this awhile back but it's been sitting in hiding. I wasn't sure what I wanted to do with it but it's perfect for our living room.
I think it's important to have reminders throughout our home reminding us our Great Shepherd.
If the little lamb looks familar to any of my crafting friends it's because I used the sheep from Papertrey's Punny Valentine to create a template.

Have a beautiful weekend & God Bless!

Cheesy Stuffed Chicken Breast

I recently picked up a few of the Biggest Loser books. I've been trying some of their recipes out on the family. So far all have been successful (meaning 3 of us like it and the 4th didn't refuse to eat it). I thought I'd share one of our 4 star recipes from The Biggest Loser: 6 Weeks to a Healthier You. Oh, and did I mention they are all supper easy to make! I've often found that healthier versions of favorites require a culinary degree with their mile long list of ingredients. So, here is a simple healthy recipe for you and your family.

Cheesy Stuffed Chicken Breast

Ingredients

1/4 c shredded low fat monterey jack cheese 1/2 c diced fire-roasted tomatoes 1/2 tsp red chili flakes 2 tbsp chopped cilantro 1/2 tsp sale 4 - 4oz boneless skinless chicken breast 3 tbsp white whole wheat flour 1/4 tsp black pepper 2 tsp olive oil

Directions

In bowl, combine cheese, tomatoes, chili flakes, cilantro, and salt. Place 1 chicken breast on a cutting board and using a knife, carefully cut a horizontal pocket in the side of the breast, make the pocket as large as you can without slicing through. Spoon 1/4 of the cheese mixture into each pocket and close with a toothpick.

In a shallow dish combine flour, pepper, and salt. Dredge the chicken into the flour mixtures coating all sides.

In large nonstick skillet, heat oil over medium-high heat. Add the chicken and cook just until tender, about 4 minutes per side. Remove toothpicks and serve.

Music Monday- Faithful

Let the word of Christ dwell in you richly teaching and admonishing one another in all wisdom, singing, psalms and hymns and spiritual songs with thankfulness in your hearts to God.
Colossians 3:16
This is an art journal I have created to showcase some of my favorite psalms, hymns and other songs. Each Monday I'd like to share one or two pages. I don't have any pages complete yet but wanted to share a song that has inspired me. It's a simple little song that you won't find in any hymn book but there is something about how it speaks of God's amazing, unchanging, forever faithful love!
I'd love to hear what songs, hymn or songs inspire and encourage you. Please share by adding a link or title to the comment section below.
May your days be full of faith, hope & LOVE!
God Bless!
