Cheesy Stuffed Chicken Breast

I recently picked up a few of the Biggest Loser books. I've been trying some of their recipes out on the family. So far all have been successful (meaning 3 of us like it and the 4th didn't refuse to eat it). I thought I'd share one of our 4 star recipes from The Biggest Loser: 6 Weeks to a Healthier You. Oh, and did I mention they are all supper easy to make! I've often found that healthier versions of favorites require a culinary degree with their mile long list of ingredients. So, here is a simple healthy recipe for you and your family.

Cheesy Stuffed Chicken Breast


    1/4 c shredded low fat monterey jack cheese 1/2 c diced fire-roasted tomatoes 1/2 tsp red chili flakes 2 tbsp chopped cilantro 1/2 tsp sale 4 - 4oz boneless skinless chicken breast 3 tbsp white whole wheat flour 1/4 tsp black pepper 2 tsp olive oil


In bowl, combine cheese, tomatoes, chili flakes, cilantro, and salt. Place 1 chicken breast on a cutting board and using a knife, carefully cut a horizontal pocket in the side of the breast, make the pocket as large as you can without slicing through. Spoon 1/4 of the cheese mixture into each pocket and close with a toothpick.

In a shallow dish combine flour, pepper, and salt. Dredge the chicken into the flour mixtures coating all sides.

In large nonstick skillet, heat oil over medium-high heat. Add the chicken and cook just until tender, about 4 minutes per side. Remove toothpicks and serve.

sounds delish!! have to try this one!! i think all 4 of mine would eat this, as long as there are no onions! lol
